Cuckoo Cookies Recipe

Recently, I had a request for the Cuckoo Cookies recipe mentioned in Chapter 3 of A Strange Spring. Here it is! It is too late to make them for Christmas. However, they might taste good with hot chocolate or tea on a snowy January day.

Cuckoo Cookies
Ingredients:
1 ¾ cups flour
1 cup sugar
½ tsp. salt
1 egg
½ tsp. soda
¼ cup milk
½ cup cocoa
1 tsp. vanilla
½ cup shortening
Mix shortening, sugar and egg. Then mix dry ingredients with milk. Drop by spoon on greased cookie sheet.
Bake 8 minutes at 350 degrees. Put a marshmallow, cut side down, on top of each cookie. Bake 2 minutes more. Cool and frost.
Frosting:
2 cups powdered sugar
4 Tbsp. cocoa
3 tsp. vanilla
Milk as needed
Makes about 24 cookies.
